Breakfast


German Pancakes

1 c milk
1 c flour
6 eggs
14 tsp salt
6 T butter
Serve hot with syrup

Pre-heat oven to 425°. Melt butter in 9X13 pan in oven. Mix other ingredients and pour into hot butter. Bake 20-25 min.


Norwegian Pancakes

1 c milk (1/2 to 2 % / 1/2 buttermilk)
1 c flour
pinch of salt
1 T sugar
1 egg

Put all ingredients together and mix


Buttermilk Pancakes

1-1/2 c whole wheat flour
1 T baking pwd
1/2 tsp salt
1 tsp soda
2 egg yolks
1/4 c oil
2 c buttermilk
2 egg whites, stiffly beaten

Combine flour, baking pwd, salt, soda. Set aside.
Blend together egg yolks, oil and buttermilk. Add to flour mixture. Fold in egg whites.


9 Grain Cereal

2 c water
1 c 9 grain cereal
1/4 c dates, chopped or pieces
1/3 c shredded coconut
1/4 c raisins
  • Bring water to a boil
  • Add all ingredients and stir to combine
  • Reduce heat and cover
  • Cook about 7 min
  • Top with slivered almonds and bananas


Pancake Syrup (double this batch)

1 cube butter
1 c sugar
1/2 c buttermilk
1 tsp karo syrup
1/2 tsp bs

Mix all together - boil for 5 minutes. Then add 1 tsp vanilla. Yum-yum - tastes like carmel.
